Biochem/Physiol Actions | Cellulases are enzymes that hydrolyze cellulose, a linear polymer of anhydroglucose units ed together by β-1,4-glycosidic bonds, to glucose. Endo-β-D-glucanase is one of the major component enzymes of the cellulase complex. It catalyzes the hydrolysis of cellulose by randomly splitting the sugar residues within the molecule. Exo-β-D-glucanase and β-glucosidase can synergistically convert cellulose into glucose and hence are used on an industrial scale. |
Application | Cellulase from Aspergillus sp. has been used to degrade cello-oligosaccharides into glucose during the analysis of BBC (bioabsorbable bacterial cellulose) biodegradability. The enzyme has also been used in photon correlation spectroscopy to study its effects on unfiltered beer samples. The parameters evaluated in this spectroscopic analysis were the size of suspended particles, flow rate and haze stability. |
