l Biological Information |
Biochem/Physiol Actions | An endodextranase that hydrolyzes -(1,6)-glucosidic ages in dextran. Dextrans are undesirable compounds synthesized from sucrose by microbial contaminants during sugar production that increase viscosity of the flow and decrease industrial recovery. Dextranase has been used for hydrolyzing dextran at sugar mills in order to improve efficiency of sugar production. |
Application | Dextranase from Penicillium has been used in a study to assess the purification properties of an extracellular dextranase from Penicillium janthinellum. Dextranase from Penicillium has also been used in a study to investigate the carbohydrate component of Penicillium funiculosum dextranase. |
Unit Definition | One unit will liberate 1.0 μmole of isomaltose (measured as maltose) per min at pH 6.0 at 37 °C, using dextran as substrate. |
l Storage |
Storage temp. | 2-8°C |
