Biochem/Physiol Actions | Wheat phytase can degrade inositol phosphate-6 and 5 at a pH of 4 and 5. |
Application | Phytase has been used in a study to quantify the number of feedstuffs showing significant phytase activity. It has also been used in a study to investigate the effect of adjusting the pH to 5.0 (optimum for wheat phytase) during whole wheat bread making on phytase activity. |
