Biochem/Physiol Actions | Lipases catalyze the hydrolysis of esters in aqueous solutions and the synthesis of esters in non-aqueous solutions. They also produce hydroxyl and carboxylic groups through the hydrolysis of ester ages in poly(ethylene terephthalate). Lipases catalyze the hydrolysis of triacylglycerols into glycerol and free fatty acids. |
Application | Lipase from porcine pancreas has been used: • for the analysis of fatty acid at the 2-position of triglycerides. • to determine the indigestible fraction of plant source that is resistant to the action of digestive enzymes. • as a component of dissolution media to study the dissolution profiles of theophylline. Lipases are used industrially for the resolution of chiral compounds and the transesterification production of biodiesel. |
